One main difference is that Keyboard mode also includes Leslie speaker cabinet modeling, which is turned off in Guitar mode (as you're already using your own speaker cabinet). Of course, you can try each mode with either type of instrument to see which works best for your setup. You can tweak each mode's parameters using the footswitches.
